THE UPPER House has launched a new modern restaurant named Salisterra. Situated on the hotel’s top floor, the Salisterra is designed to provide guests with a sensory experience, to feel as if they are hovering amongst the clouds.
Helmed by London-based Michelin-starred chef, Jun Tanaka, the menu combines cuisines of France and Italy, accompanied with zesty flavours drawn from the Mediterranean.


Forged from the Latin words salis meaning salt and terra for earth, Salisterra’s menu reveals Jun Tanaka’s flair for elegant and elaborate dishes, conjuring up a kaleidoscope of colours from the Mediterranean region.

Perfect for sharing, the menu features freshly made pastries, grilled meats and vibrant vegetable dishes. While the wine list celebrates sustainable producers and the Mediterranean’s rich vineyard heritage.


The hotel appointed acclaimed architect André Fu to construct the fresh dining space. Creating five unique spaces, André contrasted bold colours with sepia Mediterranean tones, using subtle burgundy against terracotta orange and delicate turquoise to devise a luxurious and warm restaurant.
